Abstract

The production of cheeses made from unpasteurized milk is still high, even with a legal ban imposed on the marketing of these. The manufacture of this type of cheese is a public health problem, by the use of raw milk and with the poor hygienic conditions throughout the supply chain process, contamination can occur through several sources, vehicles and several pathogenic microorganisms, such as for example, Escherichia coli. Therefore, the aim of this study is to verify the presence of E. coli potentially pathogenic coli in cheeses made from unpasteurized milk, by genotypic and phenotypic characterization and to establish the epidemiology of the strains isolated.
