Abstract

The fungus Neosartorya glabra is a good producer of pectinolytic enzymes, even so, there are no published works on this direction. Pectinases, or pectinolytic enzymes, degrade substances in order to obtain carbon source or to modify pectin. This complex comprises a group of heteropolysaccharide acids with distinct structural domains. Polygalacturonases are enzymes that degrade pectic acid, catalyzing the hydrolysis of ±-1.4 glycosidic bonds. Examples of enzymes able to clevage pectin are the pectin lyases which catalyze the degradation of pectin by the trans-eliminative cleavage. Studies on pectinases have been performed, because they reveal a great biotechnological potential in industrial processes such as fruit juice clarification, avocado oil extraction, mucilage degradation of cocoa and coffee and degumming of natural fibers. Using filamentous fungi for pectinase production in culture media supplemented with agro-industrial wastes as carbon source, decrease the costs of production and are environmentally beneficial. So that, there is less accumulation of solid wastes in the environment. This study aims to determine the best carbon source from wastes, by studying in solid substrate fermentation and submerged fermentation. As soon as this source is selected, it will be used to optimize the culture medium concerning the variables of time, temperature and carbon source concentration. (AU)
