Abstract

Milk quality is influenced by several internal and external factors, and the application of good manufacturing practices, including sanitary practices, are crucial to guarantee a good product. This project aims to investigate the impacts of an orientation action on good sanitary practices on the milk quality parameters. To analyze these parameters, the collection and analysis of milk samples will be carried out, coming from rural producers who deliver the milk to an Association of small and medium producers, and, from these, the concentrations of total protein, fat and somatic cells will be analyzed, before and after orientation meetings on good sanitary practices in the manual and mechanical milking process. The analysis of the milk samples be carriel out at the Laboratory of Ambience and Food of the School of Sciences and Engineering of Unesp/Tupã. Data will be analyzed and described graphically and for the evaluation of differences between treatments, an analysis of variance with 95% reliability will be performed. If the differences are significant, the Tukey test will be applied (p<0.05). At the end of this project, it is expected that the results obtained show the impact generated by extension practices, such as the guidance of teams with technical knowledge, aiming at correct sanitary management in the milking process and the improvement of milk quality in different milking processes (mechanical or manual). The project is important due to the contribution it will bring to the production chain, associating productive practices with extension actions and quality of the food produced, generating development and economic gain for families linked to dairy production in the region.
