Abstract

The number of breweries in Brazil has increased rapidly in recent years, particularly with the emergence of new microbreweries. These are generally small and medium-sized enterprises focused on product innovation; however, their production processes remain largely manual, which limits their potential for technological innovation and sustainability. Nevertheless, there is a lack of available data regarding the industrial profile of these microbreweries, as well as their actions concerning sustainability. This project aims to investigate the industrial profile of microbreweries, with a focus on key performance indicators (KPIs), the technologies employed, and the level of automation in their operations. Additionally, the study seeks to understand how these companies are implementing sustainable strategies within their production processes. The research will be conducted through surveys and interviews with microbreweries in the Ribeirão Preto region. The collected data will be compared with that of German microbreweries, in collaboration with VLB Berlin. Based on this comparative analysis, the study aims to identify opportunities and challenges to foster digital transformation and promote sustainability initiatives within the sector. (AU)
