Brewery waste biorefinery to obtain biologically active substances for prevention and treatment of SARS-CoV-2 and for its use as natural food preservatives

Abstract

The work plan will be developed jointly between the groups of Prof. Dr. RICARDO PINHEIRO DE SOUZA OLIVEIRA from the Faculty of Pharmaceutical Sciences at USP - São Paulo Unit, and the Visiting Researcher, Prof. JOSÉ MANUEL DOMÍNGUEZ GONZÁLEZ, Professor at the Department of Chemical Engineering at the University of Vigo - Spain. Both professors have previously collaborated on numerous projects, which has resulted in numerous joint publications, as described below. It should be noted that subprojects 4 and 6 are partially part of the project "Bioprospecting bacteriocinogenic probiotic bacteria: from optimization of cultivation to application in animal production systems", Process Number: 2018/25511-1, funded by the Research Support Foundation of the State of São Paulo (FAPESP) and led by Prof. Ricardo Pinheiro de Souza Oliveira, in which the Visiting Researcher collaborates. More recently, prof. Ricardo submitted the proposal for the CNPq Universal 18/2021 notice, again with the participation of Prof. Dominguez. Thus, the visiting researcher has actively participated in the elaboration of these projects, and during their stay the results obtained so far will be discussed, while new objectives and planned subprojects will be developed. Based on these results, a minimum of six articles will be prepared, as well as new project directions will be defined.It should be noted that this project presents a new line of research, aimed at studying the inhibition of the SARS-CoV-2 Mpro enzyme with polyphenols previously recovered from beer bagasse, which intends to be a small contribution to the scientific need to help overcome the global pandemic caused by the SARS-CoV-2 Virus.
