Abstract

Coffee is a culture of great economic and historical importance for Brazil. The country has been the world's largest producer and exporter of coffee since the 19th century, and the product represents a significant portion of Brazilian exports, with an approximate production of 21.5 million bags per year. Additionally, coffee plays an important role in Brazilian culture, being a beverage consumed at various times of the day, both at home and in commercial establishments. Coffee is also a recurring theme in Brazilian literature, music, and other cultural expressions.However, currently, there is no objective measure of the quality of the beverage extracted from the beans, except for the SCAA Cupping, which relies on human tasting, leading to sensory variation and diversification for each evaluator, lacking standardization. Laboratory tests have shown that the luminescence spectrum of green coffee beans varies according to the concentration of chemical compounds, such as sucrose, enabling this objective analysis.In this regard, we propose the development of equipment with Artificial Intelligence software capable of providing a quantitative measure of beverage quality through non-destructive physical-chemical analysis of green coffee beans (fluorescence), which is rapid and standardized.
