Abstract

Oxidation of lipids is the most important change that occurs in these types of compounds and affects the quality of products produced from oils and fats, as in the case of biodiesel. This project aims to develop methods for evaluating the oxidative state and stability of lipid systems (model and real) using easy ambient sonic-spray ionization mass spectrometry. This technique has proved as a powerful tool in the analysis of lipids and presents many advantages over traditional methods as no preparation of the sample, high speed, not the use of reagents or solvents, short time of analysis, among others. Oleic acid, monoolein, diolein, triolein and methylolein will be used as model system as well as olive oil, canola oil and biodiesel B05 and B100 as real system. The samples will be monitored at different temperatures (25, 60 and 180°C). (AU)
