Abstract

According to the World Health Organization (WHO), cardiovascular disease (CVD) is the leading cause of death worldwide and it is estimated more than 17 million deaths from the disease in 2012 (31% of global deaths). EPA and DHA are the main nutraceuticals agents Omega-3, an old acquaintance of the scientific literature on the prevention of risk factors for CVD. Despite their bioactive properties, these molecules are presented intrinsically unstable due to their reactivity with atmospheric oxygen and heat, causing oxidative rancidity which makes complex its industrial use, in addition to the odor and taste characteristic of the raw material fish. No domestic producers for the powder ingredients, free from taste and odor, aimed at industrial applications in food, beverages, supplements, etc., the Ultrapan has focused heavily the past five years to research and develop this ingredient nutraceutical free of unwanted features without producing satisfactory results considered to reach the market. Because it is an important industrial ingredient with strong demand without national competitors with high added value and scientifically referenced in the prevention of CVD, the objective of this proposal is to research and develop the encapsulation process of omega-3 through the system of solid lipid nanoparticles, for protection, extension of shelf life, the promotion controlled release of nutraceuticals active EPA and DHA and free of odor and characteristic of fish oil flavor. The technique to be employed is high pressure homogenization, where the fish oil is mixed with a matrix vegetable fat rich in phytosterols (recognized nutraceutical ingredient), and form the nanocarrier structure. Thus, it is expected to have a nutraceutical ingredient obtained by national technology and innovative process with important scientific and technological impacts, economic, social / health and business.
