Development of a juice of sugar cane flavored and enriched with functional components

Abstract

The objective of this work will be to develop sugar cane juice, enriched with coconut water and saborizado with fruit. The work will be developed based on the established process for acidified and cane juice pasteurized, through prior studies, the coconut water and fruit juices, will be added after extraction and filtering of sugarcane juice, which will follow for the standardization of oBrix, acidity and other steps.
