Abstract

This project aims at analyzing the technical viability of an orange juice extractor for commercial purposes. This orange juice extractor will utilize a system that squeezes the fruit, unlike the other machines which are available on the market that squash the oranges. Another feature that will be researched is the best position for the cut of the fruit. This way we will search for higher efficiency and also a higher quality final product (juice), since the flavonoids and lemonoids present in the peel and in the seeds won't contaminate the juice, harming its flavor. The efficiency of the developed equipment will be evaluated through a thorough Planning of Experiments (DOE) and microbiological and physic-chemical lab tests. (AU)
