Abstract

The polymers of bacteria origin, also called of biopolymers have been an object of many studies, in special the biopolysaccarides, because they have a lot of industry applications. Dextrana is a homopolysaccaride formed by D-glucopyranose units, the types of the present connections vary accordance with the producing microorganism (BROW; Mc AVOY, 1989). The extra cellular dextrana producing bacterias are grouped in the Lactobacillaceae family and more specifically in the Lactobacillus, Streptococcus and Leuconostoc genus, but the strain that is more widely used in research and in the industry is Leuconostoc mesenteroides. This strain grows between 5 and 30°C, but the optimum temperature is between 25-30°C (BARKER; AJONGWHEN, 1991). This work objective is the study of the optimum conditions to the production of Dextransucrase from Leuconostoc mesenteroides FT 045 B employing central compound experimental design. (AU)
