Abstract

Honey is the most important and consumed apiculture product, produced by Apis mellifera L. bees using nectar from flowers. Variations in physical-chemical composition of honey common are found, because factors such as climate, soil type, maturity stage, bee species and botanical origin interfere in quality. Analysis of chemicals and toxic substances in honey is important to control quality and nutritional value. The aims of the study are to evaluate the presence of minerals (cadmium, calcium, copper, chromium, lead, sulphur, iron, phosphorus, magnesium, mercury, potassium, sodium and zinc) in samples of Apis mellifera L. bee honeys of Pólo Cuesta region, State of São Paulo. Honey samples were obtained with beekeepers of local associations, maintained in plastic recipients at room temperature. The analysis will performance in plasma spectrometry and the results expressed in mg/kg. The results will be evaluated through Analysis of variance followed by Tukey-Kramer test for comparing averages (P<0,05). (AU)
