Abstract

Brazil is a major exporter of agricultural products in the world, annually producing 140 million tons of food. At the same time, the country has millions of excluded people without access to food either in quantity or quality. Also, it is amongst the ten countries that mostly wasting food, with about 35% of agricultural production being wasted. The agro-food processing is one of the activities which generate high amount of residues, with approximately 50% of raw material being discarded. The lack of information on the nutritional quality of agroindustrial byproducts does not enable its potential use in the manufacture of food products. However, the availability of nutrients may be affected by antinutritional factors, like phytic acid, oxalic acid and tannins, which are compounds naturally present in such agroindustrial byproducts. In this context, the objective of this work is to chemically characterize the by-products of the industrial processing of fruits, vegetables and cereals, determining the proximate and mineral composition, antinutritional factors, and availability of nutrients. For this, instrumental neutron activation analysis, methods suggested by AOAC and availability "in vitro" will be used. With this comprehensive study of the major agroindustrial by-products generated in Brazil it is intended to promoting scientific basis to enable their potential use in the manufacture of food products.
