Abstract

The food, in their material and symbolic dimensions, is one of the topics to study manifestations of culture in space. The German and Italian restaurants in the city of Porto Alegre are our object of study. They are related to strong European migration in the nineteenth and twentieth to the Rio Grande do Sul and the globalization of the food industry and food distribution on a large scale, expressing the movement temporally and spatially distinct. So we ask: how geographies symbolically represented by ethnic restaurants, distant in time and/or space, manifest themselves in the place? The overall goal is to investigate the organization of restaurants Italian and German in relation to the construction of geographical space and the (re) production of material and symbolic geographies and temporally or spatially distant. Among the hypotheses, we consider the geographical representations play an important role in the differentiation and particularization of ethnic restaurants, including those that call themselves Italian and German, and that such restaurants come from two different and combined processes: European migration and globalization of agrifood industry. Among the methodological procedures to be adopted are questionnaires and qualitative interviews with restaurant owners and industry representatives, along with analysis of advertisements, decorations, services offered, menus and terminology. The geographic focus of food and ethnic restaurants as possible to understand are, in the local geographies distant in space and/or time. (AU)
