Abstract The objective of this project will assess the inclusion of crude glycerin in diets for finishing lambs and its effect on nutrient digestibility, quantitative carcass traits and meat quality. Diets are isonitrogenous with 18% CP in DM and isoenergetic to 2.59 Mcal / kg DM, provided in proportion to forage: concentrate of 20:80, called G0 diet - without glycerin control, diet G10 - 10 % glycerin as part of concentrate. To assess the digestibility of nutrients will be used 40 lambs intact males, weaned, with an average age of 70 days and average body weight of 17 kg, these animals will undergo fecal samples for five days to obtain estimates of fecal excretion in which will be used indigestible NDF (iNDF) as an indicator, estimated by in situ incubation for 240 hours, samples of food remains and feces. When they reach 35 kg the animals will be slaughtered, the carcasses are cooled to 4 ° C for 24 hours and at the end of this period will be given the cold carcass weight, weight loss by cooling and cold dressing. In the dorsal portion of the Longissimus lumborum, measurements will be made to calculate the area of rib eye. The left half of the carcase is split into five anatomical regions, individually weighed to determine the percentages that represent the whole. The left leg of each carcass half will be separated and individually dissected to obtain the muscularity. Muscle will be held Semimenbranosus pH measurements and color and made the analysis of water-holding capacity, cooking losses, shear force, myofibrillar fragmentation index, sarcomere length, cholesterol and fatty acid profile. The experimental design is completely randomized, with two treatments and twenty repetitions. The data will be submitted to analysis of variance with comparison of means by Tukey test at 5% probability, using the GLM procedure of SAS statistical package. | |
