Abstract

The object of this research project, which the perspective of material culture and history of food, will be an investigation of the history of taverns in Madrid, with mapping of survival of the uses of objects, furniture, forms of organization of spaces and consumption habits. From this diagnosis, the intention is to provide a readback with the practices of global fast food services, devoid of traditions and experiences, on the back of the historic taverns, with their ancient habits of consumption.
