Abstract

Microorganisms, especially fungi, are used for the production of enzymes applied in industries, decreasing costs and increasing the speed and quality of end products. Among the most studied and applied enzymes are amylases which are used in industrial processes for the production of ethanol, glucose and fructose syrup, besides the textile, paper and detergents. The present work aims to study the production of amylase by fungi that were collected in the estância Ouro e Prata located in the Km 800 of BR 101, Itamaraju city, Bahia - Brazil. It will be standardized the cultivation, determined the physico-chemical parameters of amylases and applied purification procedure in chromatography columns. Will be tested different compounds that have the effect of induction / inhibition enzyme as well as various physiological conditions and physico-chemical cultivation, to improve amylase production by the fungus. It will be determined the physicochemical parameters of the purified amylase, which will have parts of the fragment protein sequenced. Later will be made a comparative analysis of biochemical properties of the enzymes available in the literature and will be tested the industrial application of the enzyme in the production and recycling of paper.
