Abstract

The obesity-associated insulin resistance affects largely the world population, due to a hypercaloric diet and hyperlipidemic linked to a sedentary lifestyle. Increasingly people trying to take their routine functional foods ensure the maintenance of health and inhibit the development of diseases such as hypertension, cancer, diabetes, obesity, and resistance insulin. It is in this scenario that the Chia seed (Salvia hispanica L.), the highest plant source of omega-3, proved a great candidate functional food that eases symptoms related to obesity and insulin resistance. Thus, the goal of this project is to evaluate the potential effect of ingesting Salvia hispanica L. seed as anti-inflammatory and endurance insulin in obese mouse model induced calorie diet.
