Abstract

The objective of the present project is to define which egg shell quality evaluation method has the highest correlation with shell strength at break and, thus, to identify the most accurate method, if not possible to evaluate it in a texturometer. If possible, determine which probe diameter is most appropriate. 630 white eggs from 60 weeks old laying hens will be used, which will be separated by specific gravity for guarantee uniform samples, since this is an indirect measure, not requiring the breaking of the egg. 90 eggs of each specific gravity (from 1.070 to 1.100 g/cm3 with 0.005 g/cm3 intervals) will be used, which will later be broken with probes of 2, 10 and 75 mm diameter (30 eggs of each gravity specific for each probe) . After breaking, the eggs will be evaluated for weight, percentage and shell thickness and shell weight unit per surface area. An analysis of variance will be performed in a completely randomized design, with the means being compared by the Tukey test (P <0.05). The correlations between characteristics will be calculated by the Pearson method. (AU)
