Abstract

The high biological content of proteins and minerals, beef is considered a noble food and Brazil has a prominent position among the big producers/demands of this food. With the passage of time, the interest for efficiency and producing food of better quality has increased. In this context, a protein, a proposal recently proposed, presents an innovative approach in the identification of protein biomarkers, contributing to the elucidation of the physiological and control effects on issues related to meat quality such as softness, coloration, and pH. Therefore, the objective of this work will be to investigate the proteomic profile of muscle tissue from cattle fed with alternative products, such as maize gluten meal, at different levels of inclusion. For the study are being used 120 bovines, uncastrated males, Nellore. Experimental diets were composed of 85% debridement combined with different inclusion levels of Corn Gluten Bran (0%, 18%, 36%, and 54%) to replace corn grain. After collection of the biological samples, it is desirable: procedures of protein extraction of the samples to protect the proteome by 2D PAGE; procedure for the preparation of spots for protein characterization by mass spectrometry in electrospray ionization (ESI-MS / MS). Evidence was comparable with protein research in different studies and bioinformatics studies using software to identify levels, metabolic pathways, and protein-protein interactions. The development of biomarcators related to mapping and storms of ads from resilience characteristics of quality food in the determined diet.
