Abstract

The use of food additives in several nationally developed products, within the limits established by the Brazilian legislation and conditions of use provided, ensures important technological properties throughout the food processing. Therefore, it is important to note the great interest of consumers, industries, regulatory bodies, and the scientific community on the usage trends and amounts of such substances in foodstuffs marketed in Brazil. Thus, this project aims at the compilation of information about the use of food additives in a national database, accessible by an application or website, with programming languages aggregated to the database in Structured Query Language (SQL), considering that Brazil does not currently possess such dataset in a solidified way. For that, labels of foods and preparations described by the Household Budget Survey (POF 2017-2018), available in supermarket chains and food-producing companies' websites or by visits to commercial establishments, will be evaluated and the additives declared on the lists of ingredients will be recorded. This material will be called Database on the Use of Food Additives in Brazil (BADITI), consisting of a relevant initiative for regulatory agencies, especially ANVISA, food-producing companies, and students in the field of food.
