Abstract

Milk is a product of great economic, social and nutritional importance for Brazilian society, since it is the fourth largest national production, has already employed about 2.6 million people in recent years and is a great source of vitamins and nutrients important for health maintenance. However, the lack of adequate hygiene and sanitation during the milking process, whether manual or mechanical milking, aligned with the lack of access to knowledge about good sanitary practices in milking, represents a significant risk to the quality and quantity of milk produced and marketed. In this way, this work proposes to analyze the microbiological quality of milk from the region of Bastos-SP through the Standard Plate Count during three non-consecutive visits, in which the first will be carried out before the training on Good Sanitary Practices in Milking and the next after this training in order to assess its impact, provide guidance to producers and also assess the differences between manual and mechanical milking. This work contributes to sustainable development objectives 2, 8 and 12 and aims to strengthen ties between the University and the external community, contributing to the development of the dairy chain in the interior of the state of São Paulo.
