Abstract

The valorization of food products and processes can be obtained by the intensification of conventional processes. Due to the high consumption of fruits, the improvement of phenolic compounds extraction from fruit seeds will be the main focus of this proposal. For this, ultrasound (US) and pulsedelectric fields (PEF) will be used to enhance an initial step of biorefinery. Hydroalcoolic solvents will be used together with mechanical agitation to obtain the kinetics of phenolic compounds extractions. The best conditions will be used to evaluate the effect of US assistance and PEF treatment. Also, the extracts obtained under the maximized conditions will have the total flavonoids and antioxidant activity determined. The results can be used not only to improve conventional process but also to provide new added-value destination to underused raw material from agroindustry. (AU)
