Abstract Four formulations prepared with green Musa spp. AAA and inulin (micronized Musa + micronized inulin; micronized Musa + non-micronized inulin; non-micronized Musa + micronized inulin; non-micronized Musa + non-micronized inulin) will be evaluated during the concept testing phase for their in vitro antioxidant, anti-inflammatory, and gut microbiota-modulating activities. The in vitro antioxidant activity will be assessed using free radical scavenging methods with DPPH (1,1-diphenyl-2-picrylhydrazyl). The evaluation of anti-inflammatory activity will be conducted in basal and LPS-challenged Caco-2 cells. The assessment of gut microbiota-modulating capacity will be performed using the in vitro fermentation method with fecal samples from healthy volunteers, via the evaluation of short-chain fatty acid production by gas chromatography coupled with mass spectrometry, and the determination of the differential profile of twelve representative gut bacteria by gene expression technique via RT-PCR.
