Threshold detection of the basic tastes and sensitivity to ao 6-n-propiltiouracil analysis in children from 7 to 10 years old

Abstract

lntroduction: Although the variety of food specially developed for children is increasing, their participation in sensory evaluation is still small. Sometimes childrens food intake is diferent from the adults pattern, demanding a better knowing from the childrens sensory characters to adjust the tests for this age. Objective: ldentify the childrens detection threshold of the basic tastes: bitter, sour, sweety and salty, and ifs association with PROP\'s sensitivity, nutritional status, gender and age. Metodology: 212 children from 7 to 10 years old, from the Escola de Aplicação- FE/USP. Their nutritional status was estimated by body mass index (BMI). During the detection threshold tests they received six crescent solutions for each basic taste, in pairs, and with forced choice. The sensitivity to PROP test was done with six samples of paper filter impregnated with PROP (crescent solutions), and the bitter intensity was identified by the hedonic scale (5 points). The association between the variables were analised using diference tests and logistic regression. Results and Discussion: A great variety between detection threshold and PROP sensitivity were found. No diferences were found between the groups, neither association between the variables. Conclusion: Incentive is very important to studies with that requires childrens atention and time. Its possible to develope sensory evaluation tests with children and acquire believable results. No difference were found between the groups, requiring more studies. (AU)
