BSc in Pharmaceutical Science (Magna Cum Laude) from the Federal University of Ceará (UFC, 2010), with a MSc (2014) and PhD (2017) in Food Science from the University of São Paulo (USP). In 2019, he began a postdoctoral fellowship in the Department of Science and Technology at Örebro University (ORU, Sweden), where he has been a researcher since 2021. He coordinates a Swedish Research Council Starting Grant project (2021-2025) and participates in various research and infrastructure initiatives in Sweden and Europe, maintaining active collaborations with the private sector. Victor is Associate Editor for the journal Frontiers in Nutrition, was an assistant professor at São Camilo University Center (2018-2019), and currently coordinates the Instrumental Analytical Methods module in the Chemistry course at Örebro University. His main research focus in on the application of metabolomics to food and nutrition, with emphasis on: (1) developing pipelines for the analysis, processing, and integration of targeted and non-targeted metabolomics data (LC-QqQ-MS, LC-QqToF-MS, and GC-Orbitrap-MS); (2) metabolomics to improve vegetable quality using bioanalytical methods using a "From Farm to Fork... and Beyond" approach, integrating metabolomics with invitro colonic fermentation models and reporter cell assay; and (3) exploring the effects of food components on gut microbiota functioning and human health, focusing on bioactive compounds and dietary fibers.
