Abstract

Insects have been consumed by humans for thousands years. However, their commercial large scale production is more recent . In Brazil, edible insects is used only on animal feed. Although highly rich in proteins and lipids, the insects lack some mineral nutrients, which need to be added to the animal feeds through mineral supplements. An alternative to this procedure is the fortification of the insect itself with the mineral of interest. Fortification studies have been carried out mainly for calcium. In the current research & innovation project will be studied fortifications with other metals. In addition, it will be studied procedures involving the use of bioactive compounds with the objective to increase the bioavailability of these metals (naturally occurring or fortified in their tissues).
