Ionization radiation effect of cobalt-60 in insect resitence and nutritional and sensorial qualities of soybean grains Glycine max (L.)

Abstract

Soybean is the most important legume in the world. The high protein amount became fundamental in animal and human nutrition, like its by products. Brazil have big production of soybean, but occours losts because the alterations in physico-chemical components. Several methods can be used to minimaze this effect, and the ionizating irradiation from Cobalt-60 is a security and effecient method to increase the shelf life of food, and to minimaze the insect attack.Because the commercial importance of the soybean, the alterations in the grains have to be studied. The main of the research is determinate alterations by irradiation and conservation of the soybean grains, and the verify the comportament of several cultivars. Phenolic compounds (isoflavones and phenolic acids), proteins and theirs complexations will been studied, and sensorial aspects by Descriptive Quantitative Analysis, too. Insect assay will be done to determinate alteration in the resistence to insect after irradiation. (AU)
