Abstract
Tannases (E.C: 3.1.1.20) are enzymes able to hydrolise ester and depsídic chemical linkages in substrates as ânic acid, epicatequin galate, epigalocatequin galate in aqueous medium. Tannases can also synthesize ésters of galic acid in non aqueous system. Enzymes are used in several industrial applications, however, its use is frequently limited, due to low stability and high cost. The study the production of tannase in industrial residues contributes to reduction the costs involved in this stage of the process. Besides, other advantage is the possibility to join value to these residues, promoting the detoxification for subsequent use in animal feed. Another form of turning more viable the industrial use of enzymes is through the enzymatic immobilization, to promote the enzyme reuse in enzymatic processes. The present project intend to study the tannase production by Pacylomyces variotii in different solid residues, evaluating the use of these fermented residues as supplement of animal feed. The immobilization process of Paecilomyces variotti tannase, in different supports, and its quimioseletivity in the free and immobilized form will be object of this study using as substrates epicatequin galate, epigalocatequin galate, galotanin and elagitanin.
