Microencapsulation of sodium bicarbonate with lipidic materials in vibro fluid bed coating and spray cooling

Abstract

The microencapsulation technology is employed as a potential tool for the protection of a compound opposite the external environment and its liberation through controlled conditions. Currently, several studies have been conducted with the various techniques used in producing the microparticles, among them are the methods chemical, physical and physical-chemical and the spray drying, spray cooling, the coacervation, complexation and recovery in bed fluidised, the most studied. Still, a wide variety of materials from coating and filling have been used, being chosen, especially as the application of technological microcapsules and how to release the active material. Lipids, its esters or alcohol derivatives are normally used as the wall when hydrophilic compounds are microencapsulated and how to release the filling occurs by the merger of microcapsule. Among these compounds, is the starter chemical consisting of a basic agent (usually sodium bicarbonate), an acid agent and an inert material, used widely in the bakery industry. The main advantages that justify the microencapsulation of this agent for growth are: (i) the ease of mixing and homogenization in the batchs as it presents in the form of dry powder, (ii) the greater stability during storage when compared with leavening agent not microencapsulated; (iii) the greatest protection against moisture and (iv) the controlled release that prevents the premature formation of carbon dioxide which promotes the optimization of conditions for the process, improving product quality and reducing costs for possible losses. The main goal of this work is the development of microcapsules of sodium bicarbonate, coating with lipidic materials, using the equipments: spray cooling and vibro bed coating. The research will involve the optimization of the operational conditions of the studied processes and the characterization of the microparticles obtained. (AU)
