Abstract

Peanuts stand out for their high nutritional value, besides being oilseeds well-known and appreciated both fresh and processed. Due to recent foodborne outbreaks, peanuts are now considered a product of potential risk for Salmonella transmission. This product has low water activity and high fat content which contribute to increasing the thermal resistance and survival of Salmonella. The current project aims to determine the prevalence of Salmonella, Escherichia coli and other indicator microorganisms in the peanut production chain. Five hundred samples from the steps of post-harvest, processing, manufacturing and retail will be analyzed. Salmonella detection will be carried out by the Biomerieux immune system method. The Enterobacteriaceae Total count will be performed according to APHA method. The count of total coliforms and E. coli will be determined in petrifilm. The water activity will be performed in a hygrometer. The data obtained will assist in the preparation of risk assessment studies, as well as used by Anvisa's Committee on Food Hygiene with the Codex Alimentarius as scientific reference to support the development of a new code of hygienic practice for low water activity foods.
