Abstract

The present project shows a purpose of the drying pineapple peel and the central cylinder study (Ananas comosus L.), Pearl variety, and the viability of its use in industry, considering the importance of the utilization at the industrial waste from fruit processing. The drying of the pineapple peel and the central cylinder suggests a way alternative to avoid the waste and can enable its use in the production dietary fiber and biofuel. The drying kinetics will be determined for convection forced and natural equipments. The cellulose and carbohydrates quantity, of the dry products, will be determined to analyze the possibilities of industrials utilization pineapple peel and central cylinder. The mathematical modeling and the statistics results will be made through the program MATLAB R2009. (AU)
