Development of postharvest storage methods of fresh raspberry

Abstract

The raspberry has stood out among the berries because it has high content of antioxidant and anti-cancer substances, besides being an attractive fruit. With pleasant flavor it can be consumed fresh, in form of jelly, juice, yogurt, ice cream and candy. However, raspberry has a lifetime limited by a lot of factors, mainly, high metabolic rate, flesh firmness decrease, browning and rot. These factors mean that the fruit retains the qualities desirable for marketing for just five days The purpose of this project is to extend the postharvest conservation period of fresh raspberry, using postharvest conservation techniques and through application of retardant ripening substances as chitosan and 1-MCP. The project will be divided in four stages. At first will be determined the best temperature for refrigerated storage of the fruit, looking for extend their maximum conservation. In the second stage will be searcher the most appropriated packing for raspberry preservation. In the third stage, the goal will be to value the raspberry's physiological response when applied 1-MCP during postharvest. And in the fourth one, will be measured the behavior of the fruit when applied chitosan during the preharvest. The analysis carried out will be: mass loss, color, flesh firmness, soluble solids, titratable acid, ascorbic acid, respiration and ethylene production rate, total and soluble pectin level, anthocyanin content and rot incidence. The statistic will be randomized in a factorial scheme with four replications of fifteen fruit per replicate. The results will be submitted to analysis of variance and the averages will be compared by Tukey test (P <0.05).
