Abstract

Six sigma has been recognized by as an approach that increases the efficiency, profitability and processes capability not only in academic community but also in business sphere, due to be supported on DMAIC and DFSS methodologies. The DFSS approach emphasizes prevention and optimization, aiming the design of products, services or processes much more capable and configured for Six sigma systematic. The objective of this project is to analyze if the application of statistical tools and techniques enable more effective results for food product development process. The statistical tools included in DFSS will be examined regard to its applicability and importance in a survey research, which will include small and medium size food industries located in southwest of Brazil.
