Abstract

The FEA ( UNICAMP) Food Biochemistry Laboratory has extensive experience in microorganisms screening for enzymes production. These strains have been kept in a collection mostly consisting of fungi and yeasts, collected from various Brazil´s and Latin America´s regions. The soil consists of a huge diversity of microorganisms, as well as organic compounds that are energy and carbon source for these organisms. For use these compounds, microorganisms species synthesize and secrete several enzymes. Since many of these compounds are of industrial interest, once they increase the product quality and its value added, this work´s objective will be screening newly soil fungi for tannase and lipase production, for food industry use. Then, characterize biochemically, partially, the enzymes obtained. To this end, will be used soil and fruit samples from Belem do Pará´s region, in the Amazon.
