Abstract

The extrusion process is widely used due to its efficiency in texturize, coke, and sanitize several food types. During the process the ingredients receive pressure, heat, and shear force in a laminar flux, modifying the physic-chemical properties of starch and proteins. Carbohydrates that escape from enzymatic digestion on small intestine (starch and fibers) may be fermented by bacteria's in the colon, producing short-chain fatty acids associated with gut health and possibly helping in insulin and glucose metabolism. The present study will evaluate the effects of dog food processing (raw material particle size and extrusion configuration) on food resistant starch content, starch gelatinization degree, nutrient digestibility, fecal production and quality, fermentation products formation, fecal microbiota composition, and glucose and insulin postprandial response. The experiment will follow a 4X2 factorial arrangement of treatments, with four raw material particle sizes and two extruder configurations adding up eight diets. A block design will be used, with three blocks of 16 dogs, adding up 48 dogs and six dogs per diet. Data will be evaluated with the GLM procedure of SAS software, the model will consider the effects of block, diet and animal. Multiple comparisons will be made with Tukey's test. The main effects of treatments (particle size and extrusion) and they interaction will be evaluated with the SLICE procedure of SAS. A probability of 5% will be considered significant
