Abstract

This study aims to assess the meat quality of lambs subjected to the stress of transportation and check whether there is benefit in the prior administration of two doses of vitamin E. Will be used 21 lambs, male, crossbred Dorper/Santa Inês, with 75 days, in confinement. The animals will be slaughter, and boning and muscle sampling will be taken to sensorial analysis, shelf life, fatty profile, shelf life and water holding capacity. (AU)
