Abstract

Beef, wich is an nourishing food, is frequently related to the cardiovascular illnesses due to its fat acids ratio and cholesterol levels. However, some studies have shown that the use of different sources of fat on ruminant's diet can modify the fat acids profile on the meat. Other experiments have demonstrated a synergic effect between selenium and vitamin E on lipid metabolism. On this way, the objective of this study will be to determinate the effect of sunflower oil utilization, as fat source, added to the antioxidant effects of selenium and vitamin E on metabolism, meat lipid oxidation and in its nutritional value, beyond its influence on human health. Two experiments will be carried through: in one of them, forty eight Nelore bovines will be divided in 4 groups, with 12 animals per treatment, as description: Control (C): Control diet without additional selenium, vitamin E or sunflower oil supplementation; Control + Antioxidants (C+A): Control diet with 5mg Se/kg of DM, in the form of organic selenium and 2000UI of vitamin E/kg DM supplementation; Control + Oil (C+O): Control diet with 3% of sunflower oil/kg of DM supplementation; Oil + Antioxidants (O+A): Control diet with 5mg of Se/kg of DM, in the form of organic selenium, 2000UI of vitamin E and 3% of sunflower oil/kg of DM. On the second experiment, about nutrition and human health, the meat produced in the animal science experiment will be given for elderly. The production of meat with a better fat acids profile, vitamins and minerals and which can improve even more the nutrition and has a positive effect on people immunological system comes to be an important work for the health agents, nutritionists and for all the productive meat chain.
