Abstract

Food is shaping civilizations for centuries and characterization of dietary patterns established in modern societies proves important, both economically, as the nutritional point of view, to establish more sustainable consumption patterns. Along with the project "Mapping isotopic diet in Brazil - the most isolated nuclei to large urban centers" (Proc. FAPESP 2011/50345-9), which has as main objective to determine the feeding patterns of urban and rural populations through the Brazilian isotopic composition stable carbon (´13C) and nitrogen stable (´15N) samples fragments nails. To achieve this goal it is necessary to characterize the isotopic composition of the main foods consumed in Brazil, it was possible to compare the isotopic composition of fragments of fingernail with the main food consumed in the country. Foods to be analyzed were selected using the food consumption survey done by the IBGE in 2008-2009 taking into account the data found in Table 3048 SIDRA database. They will be purchased in supermarkets giving preference brands nationwide. Food will be prepared for analysis and isotopic composition of carbon and nitrogen will be determined.
