Abstract

The use of sanitizers products in food processing surfaces can lead to long-term corrosion and deterioration of these surfaces and equipment. Therefore, methods have been developed for the utilization of natural products to reduce the use of classic products currently available. This project will be investigated the effect of the solution of essential oils from Cymbopogon citratus, Illicium verum, Zingiber officinale, and Eucalyptus globulus in biofilms of Salmonella serotype Enteritidis on stainless steel coupons. For this, the coupons will be incubated in an appropriate place and the biofilms of Salmonella Enteritidis will be treated with disinfctant solutions based on essential oils. Briefly, these coupons will be washed with PBS solution and will immerse in a solution of essential oil for 1 hour at 25ºC. The oils of each plant will be added according to the concentration determined by the tests and MIC (Minimum Inhibitory Concentration) and MBC (Minimum Bactericidal Concentration. All the results will be expressed in Colony Forming Units per square centimeter (CFU/cm²).(AU)
