Abstract

The demand for organic food has increased sharply in recent years, especially dairy products. Therefore, procedures for authentication of then, without knowing their origin, have a great importance for consumers to assure that food they are purchasing is genuinely organic. However, it is necessary more researches about analytical parameters that distinguish between organic and conventional milk and dairy products, as well as the benefits they may offer to human health. Thus, this study aims to differentiate samples of organically and conventionally produced bovine milk, through isotopic analysis, determination of jasmonic and salicylic acids, antioxidants and nitrogen compounds levels in order to prove the authenticity of certified organic milks and to characterize them nutritionally. During a year, six samples of raw milk of 2L each will be obtained, every month, from three conventional farms and three certified organic farms, all located in Botucatu/SP region. For isotopic analysis, milk fat and protein will be analyzed separately. For antioxidant and nitrogen compounds, the samples will be divided into two subsamples, one of which will be pasteurized and, then, the effect of milk processing on these parameters will be checked too. The evaluated variables will be: isotope ratio of C, N, H and O, concentrations of salicylic and jasmonic acids, polyamines, phenolics, flavonoids, carotenoids, nitrates and antioxidant potential.
