Abstract

The pacamã (Lophiosilurus alexandri, Steindachner 1876) is a freshwater species, endemic of the São Francisco River, with a high potential for use in aquaculture. The obtainment of the geographical indication to the pacamã is an innovation of the commercialization with value-added products for the specie. The chemical composition knowledge, mainly fatty acids profile and sensory studies are important parameters to define the products commercialization. However, the scientific literature there is scarce. No data of chemical compositions, processing and sensory evaluation for the pacamã. The aim of the study is to obtain data of the different production systems: The São Francisco River and affluents (Januaria region, MG), the Três Marias reservoir, MG and farmed (UFMG). The Flash Profile is used to differentiate farmed and wild fishes. Flash Profile is a method meant to rapidly profile products. The liquid smoking increases the shelf-life and improvements of the organoleptic characteristics of the pacamã, and can be used to value-added products. (AU)
