Abstract

The fish oil is a product of high nutritional value, possessing several compounds with biological activity. The amount of polyunsaturated fatty acids with long chain present is substantial, as well as the high content of squalene, which has anticancer, antioxidant and radioprotective activities, potentiating the immune system, among others. Unlike conventional oil extraction from shark liver, which employs high temperatures, this design offers to obtain shark liver oil using supercritical CO2 extraction, with the advantages to use soft temperatures and process without organic solvent. With the oil obtained we intend to conduct physical and chemical analysis. The viscera collected and lyophilized in small uniform pieces, will be submitted to supercritical extraction under different conditions P (pressure) and T (temperature) and in the extracted oil will be determined the refractive index, density, viscosity, fatty acids composition and peroxide index. It is expected to obtain oils with active compounds concentrations better than those obtained by conventional methods. The results of this project will contribute to the expansion of knowledge in the area, since there are few studies on this oils extraction employing supercritical CO2 technology.
