Abstract

Lipases (triacylglycerol acyl hydrolase, EC 3.1.1.3) constitute a class of enzymes that catalyze the hydrolysis of ester bonds of triacylglycerols by operating on oil/water interface. These enzymes stand out in industrial processes and are used in the production of detergents, pulp and paper industries, dairy, cosmetic, pharmaceutical, among others. The microbial lipases also have application in biotechnology and organic synthesis, being important to search new sources of lipases with distinct properties. The fungi have been explored for production of enzymes by secreting large amounts of protein into the extracellular medium. A strain of the filamentous fungus Penicillium sp J39, isolated from soil in the region of the Atlantic Forest, was studied in relation to the optimum conditions for lipase production. Thus, this work aims to purify, immobilize and characterize the main biochemical properties of free lipase and immobilized derivatives in order to evaluate future applications of this enzyme. (AU)
