Abstract

The objective of this work is to analyze, with stable isotopes techniques, coconut water of Brazilian market, to verify the presence of adulteration in its composition. In this work, will be used in natura coconut water, manufactured in laboratory with and without adulteration, and commercial coconut water. In natura and commercial coconut water samples will be analyzed in parameters of: crude protein, lipid, carbohydrate, caloric value, reducing sugars (RS), total reducing sugars (TRS), non-reducing sugars (ANR), Brix, titratable acidity (TA), pH, Ratio (Brix / titratable acidity), turbidity, for its chemical characterization and comparison with identity standards and beverage quality. The isotopic analyzes of in natura coconut water commercials and manufactured in laboratory, will be made in mass spectrometer of isotopic reason. The obtained values of beverages isotopic analyzes manufactured in laboratory will allow to estimate the method mistake. Based on law information a legality curve will be made in a graphic. After isotopic analyzes of commercial beverage samples in spectrometer mass, will be possible to calculate percentage of C3 carbon (coconut water) and C4 carbon (sugarcane) and compare with the legality curve to identify fraud.
