Abstract

This research project aims to show a proposal configured for selecting microorganisms producing fungal xylanases, as well as the study of production of the enzyme of interest. The study of these enzymes can be possibility observe characteristics of food application. The microorganisms are characterized by producing a pool of enzymes, and these can have a wide industrial application. This application takes place in both the direct processing of a particular product, such as the use of foreign raw materials, such as agro waste currently targeted for new alternative energy generation and biofuel. Such microorganisms can be associated with established processes for producing enzymes and consequently lead to a reduction of the release of these residues in the environment and still produce byproducts value.
