Abstract

Every company should evaluate the satisfaction related to their products and services regularly because the customer retention key is to satisfy them. Sensory analysis is a scientific method used to measure, analyze and interpret reactions related to food and other products characteristics such as perceived through the senses. The sensory analysis function is to provide valid and reliable information to research and development, production and marketing areas in order to guide business decisions based on products sensory properties perceived. The ultimate goal of any sensory program is to find the most efficient and cost-effective method to obtain sensory information, which are necessary to optimize new products development. This project proposes the sensory analysis development due to the proper terminology definition, standards development, panelists training and defined methodology application. Specifically, theses goals may be divided into: 1) to define properties to be assessed into cosmetic products categories, to select sample - raw materials and commercial products, as well as a scale development, both based on physical-chemical properties; 2) to execute sensory evaluation with healthy volunteers to understand the perception level of consumers against several raw materials at different concentrations. Volunteers will be offered vocabulary training (definitions of sensory analysis) to validate their opinions; 3) to identify whether the consumer can notice through the senses, when in contact with no labeled products, the claim then used by the industry. The study seeks to suggest behavioral tendencies and preferences and it does not intend to establish generalizations about the Brazilian market. (AU)
