Abstract

Ora-pro-nobis (Pereskia aculeata Miller) is a cactus found in Brazil, from Bahia to Rio Grande do Sul. This is a specie with high protein content (highly digestible) and minerals (iron, manganese, calcium, etc.), mucilage type fibers and absence of leaves toxicity, which can be an important source for human and animal consumption. Compounds such as arabinogalactans and galactomannans, were identified making it with potential application in association with Fe (III) ions and other metals. The purpose of this study is to determine the best conditions of time, temperature and solvent ratio / raw material to obtain an extract rich in iron, using dried leaves of Ora-pro-nobis. The first step will consist in the characterization of the raw material (Ora-pro-nobis) determining the centesimal composition (dry matter, protein, lipids, crude fiber and ash) and minerals (calcium, magnesium, potassium, sulfur, phosphorus, manganese zinc, iron, boron and copper). The second step will be to study different temperatures and time of extraction using an experimental design of two variables, to obtain the Ora-pro-nobis extract. If necessary, it can be evaluate different ratios of solvent/mass of raw material. From these results, the extract, rich in iron, will be used in the preparation of a system using particles from the ionic and electrostatic interaction existing between two natural and biodegradable polymers: chitosan and pectin.
