Abstract

The fish market has grown in recent years due to a search for healthier foods, since they have a low content of saturated fat, as well the increase in the population's purchasing power. However, despite the numerous health benefits, the fish may be exposed to toxic inorganic contaminants present in the water naturally or by human action, such as arsenic (As), which can cause bioaccumulation processes in species through the food chain. The toxic effects of As are closely related to their chemical forms and oxidation states, and in general inorganic compounds (As (III) and (V)) are more toxic than organic (eg. arsenobetaine). Thus, due to the restrictive limits of this contaminant and the accelerated growth of the fish market, this project aims to assess the processes and effects of bioaccumulation in the tilapia under controlled conditions. After bioaccumulation process, fish tissues are divided into fillet, liver, gills and stomach. Samples are decomposed using a furnace assisted by microwave radiation and the determinations carried out by an inductively coupled plasma mass spectrometry (ICP-MS). The study and optimization of lipid and protein fractionation methods of species of inorganic As (i-As) in these samples will also be subject of study in this research. (AU)
