Abstract

The wine chemical composition is essential to design its sensory features, being those dependent on grape growing, processing, stabilization processes, storage and intrinsic characteristics of the region. In one hand, the classic and emerging wine regions raise Brazil to a prominent position in the worldwide panorama of wine production; on the other hand, there is a significant lack of studies that describe the chemical profile of wines at a molecular level and, consequently, their influence on the sensory profile. In order to fulfill this gap, metabolomics have been applied aiming at identifying and quantifying the wine metabolites and, from them, consolidate the identity of the wines produced in these emerging regions. The emerging regions of São Paulo state and the Medium Valley of São Francisco River are considered important wine producing centers, as well as, the Serra Gaúcha region. However, the wine produced from these emerging regions still lacks identity. The present project aims at determining the metabolomic profile of wines produced by the emerging and classic producing regions in order to relate it with the sensory descriptive and acceptance approaches. We hope that this study can contribute in promoting the identity of the wines produced from these regions, culminating with the consolidation of these emerging regions as Geographical Indications.
